Start the morning off in The St. Regis Princeville Resort’s main dining room— the Makana Terrace—
where you will enjoy sweeping views of Hanalei Bay and an exceptional selection of breakfast options. My
recommendation is to indulge in a Kona Lobster Omelet with Coconut Lobster Bisque. This enchanting
dish elevates the ordinary breakfast omelet to a magical experience. Lobster lovers will delight in the 7 oz.
portion of Kona Lobster tail, which is poached in butter, then cooked into the omelet, then topped with
a cherry tomato confit. The decadent coconut lobster bisque is poured over the omelet and local herbs
garnish the dish nicely.
With such a rich and decadent dish, an amazing pairing would be the NV Ruinart Blanc de Blancs
Champagne. The bright acidity in this Champagne will help cut through the richness of the coconut
lobster bisque, while the pronounced minerality will complement the delicacy of the lobster meat.
Ruinart, one of the oldest established Champagne houses, sources their Chardonnay for their Blanc
de Blancs primarily from premier crus of Côte des Blancs and Montagne de Reims terroirs resulting in
a highly aromatic Champagne with delicious fresh fruit notes, pink peppercorns and balanced with a
distinct vein of minerality.
