Mix all ingredients with ice. Shake, and strain into a rocks glass filled with ice.

Fresh pineapple chunks (1-inch)
Splash club soda
For pineapple mint syrup, peel one pineapple, cut into chunks, juice and strain.
Combine 2 cups water and 1 1/2 cups sugar in saucepan and bring to a boil. Remove
from heat. Add 2 oz. mint and steep until cool. Strain. Add pineapple juice.
In a mixing glass, muddle pineapple, mint, and lime. Add rum, pineapple mint syrup,
and ice. Shake vigorously. Pour into a highball glass and top with a splash of club soda.
