From fresh fish and seafood to island produce and exotic tropical fruits, Makana Terrace offers meals throughout the day that not only connect diners to the resort through a supreme dining experience, but also connects them to the island itself, with local food as its link.
Overseeing Makana Terrace’s kitchen and culinary staff is Chef de Cuisine William Chen. His vision for the restaurant
is to create a menu based on exquisitely prepared dishes composed of the very best the Hawaiian Islands have to offer in
a sophisticated but casual setting that reveals the beauty of Kaua‘i’s North Shore like nowhere else. “Dining at Makana
Terrace, you can enjoy The St. Regis experience in a relaxed setting,” Chef William says. “I was hired with the objective of
showcasing the islands’ best food in a way that was of St. Regis caliber but decidedly distinct from any other property.”
In January 2001, Chef William transferred to The St. Regis Princeville Resort from the Moana Surfrider, A Westin
Resort & Spa, the original premiere Hawaiian resort in the heart of Waikïkï. Prior to that, he lived in Boston, New York
and Shanghai, studied cooking in Paris where he completed two culinary apprenticeships, and learned the restaurant
business inside and out.
